These flavours are inherently infused into the starchy endosperm matrix of the malt during endosperm modification.

Gingerbread Cookie Infusion Malt

We are delighted to launch the next edition of our Infusion malt seasonal range – the Gingerbread Cookie Infusion Malt. Yes, you read that right!
With warming aromas stemming from generous additions of cinnamon and ginger into the malting process, the Gingerbread Cookie infusion malt finds soft balance with further additions of nutmeg, allspice and cloves working in harmony to contribute to a complex medley of depth, cosy spice and festivity.
The Gingerbread Cookie infusion malt is a glorious Winter Wonderland… in malt form!

Our Sage and Thyme infusion malt arouses the senses in unexpected ways. A dankiness from sage which offsets bitter, herbal thyme notes to result in a nuanced and elegant pairing.

Summer Infusion

Our second creation was made in summer. Inspired by the mediterranean lavender fields and Spanish orange tree yards our Summer infusion malt developed. This malt features delicate floral lavender coupled with refreshing, bright citrus, all harmoniously balanced with classic soft malt notes.

Winter Infusion

For our first creation we added a mix of winter spices into the malting process, the grains were infused with the most flavorful aromas. Think of cozy moments with a hot cup of glühwein, or a freshly baked speculoos.

One of my favourite things to do as a creative brewer is to have no boundaries – various additions throughout the brewing process; crazy and unique ingredients working in harmony to create unique complexity. Adopting this approach into the malting process was the logical evolution for me, so the infusion series was created.
